Project Description

Currently, after dry hopping brewers dump the hops down the drain after they are done with them. This is common practice for craft brewers. For a mediun size brewery, involves about 20-40kg per tank (which is approx. £400-800 per tank). The hops that get dumped almost certainly have many desirable products still left in them – in particular alpha acids that can be used on the hot side to create bitterness. The aim of this project is to explore the value of spent hops, extract compounds using analytical chemistry and study the re-use of the hops at a different stage of brewing and their impact on the final product (beer).
